City of Huntsville Routine Inspections for July 2015


 

1.  3 Spoons Yogurt       Score: 19

1524 11th Street

  •  Improper cold hold
  • Employee not washing hands before placing gloves on.
  • Dead gnats observed inside yogurt machine
  • Gnats observed inside kitchen/prep area.
  • Spoons must be inverted to prevent any cross-contamination

2.  Bar T Travel Center      Score: 33

601 State Hwy 75 North #B

  •  Improper cold hold
  • Open employee drink stored above ready-toeat foods inside small reach-in cooler.
  • All self-serve product must be available inside ingredient book.
  • Broken seal on Pecan Pie of for self-serve
  • Raw eggs sitting above ready-to-eat foods inside small reach-in cooler.
  • Improper wash, rinse, sanitize method being conducted inside prep-sink
  • Certified Food Manager is needed Plumbing leading into drains must be provided with a 1 inch air gap.
  • Ice machine needs to be cleaned and sanitized and broken tongs needs to be discarded.

  • Improper storage of employee drinks
  • Dirty utensils need to be re-washed and sanitized,
  • Tortilla warmer needs to be cleaned,
  • multiple cutting boards needs to be sanded down or replaced and stored properly

  • Cook must change gloves and wash hands properly after changing task.
  • Cook may not touch clothing, face, etc.. When gloves are being used.
  • Utensils stored inside handsink, handsink is for handwashing only.
  • Improper date marking on Ranch.
  • Paper towels must be provided at all handsinks at all times
  • Dishwasher testing too weak and utensils stored in soiled water.
  • Dipper well must be in proper working order.
  • Floor drains clogged with food debris needs to be cleaned and ice machine drain must be provided with a 1 inch air gap.
  • Fryer baskets and dirty utensils need to be cleaned and sanitized

  •  Multiple open employee drinks and employee  personal items stored by clean dishes and prep areas.
  • Improper use of a handsink and raw eggs stored by ready-to-eat foods inside walk-in cooler.
  • Counter under grill where clean dishes are being stored needs to be cleaned and scoop with handle is needed for diced tomatoes.

  • Employee personal items stored inside kitchen/prep area and container of cream cheese stored with out proper cover or lids to prevent cross-contamination.
  • Paper towels are needed at wait staff handsink at all times.
  • Spider web observed inside venthood and multiple flies observed inside kitchen/prep area.
  • Sanitizer bucket left over night needs to be remade for proper sanitization.
  • Thermometer is needed for reach-in freezer Ice machine needs to be cleaned and sanitized.

  • No tongs available for lemons inside bar area.
  • Product cooked and held longer than 24 hours must have 7 day expiration date available.
  • Multiple flies observed inside kitchen/prep area.

  • Thermometer is needed inside Ranch reach-in cooler Ice machine needs to be cleaned and sanitized

  • Torn package of salami and molded containers of food pulled from walk-in cooler.
  • No hot water available at deli handsink.
  • No paper towels provided for restroom handsink. paper towels must be provided at all times.
  • Multiple flies observed through out the store.
  • Chemical spray bottle must be labeled with chemical name.
  • Certified Food Manager is needed.
  • Thermometer is needed inside deep freezer Ice machine needs to be cleaned and sanitized
